Black Bean Soup, with Salsa Recipe
Ingredients
- 2 cans (15 ounces each) of beans rinsed and drained
- 1 tablespoon of olive oil
- 1 onion finely chopped
- 3 garlic cloves, minced
- 1 bell pepper (any color) diced
- 1 teaspoon of ground cumin
- 1 teaspoon of chili powder
- 4 cups of vegetable broth
- Salt and pepper to taste
Approximately half a cup of fresh salsa (you can either buy it from the store or make your own)
Optional toppings; chopped cilantro, diced avocado, fat sour cream, shredded cheese
Instructions
1. Sauté the Vegetables; Take a pot and heat the olive oil over medium heat. Add the chopped onion and diced bell pepper to the pot. Cook them until they become softened which usually takes 5 minutes. Then add the garlic, ground cumin and chili powder to the mixture. Cook for a minute until you can smell their aromas.
2. Prepare the Beans; Keep one can of beans for later use. Take the remaining can and blend those beans using an immersion blender or a regular blender along with an amount of vegetable broth until you achieve a smooth mixture.
3. Cook the Soup; Add both the pureed beans mixture and whole black beans to the pot along with all of your vegetable broth. Season it with salt and pepper according to your taste preferences.
Lets start by bringing the soup to a boil. Once it reaches boiling point lower the heat. Allow it to simmer for 15 20 minutes. This will give time for the flavors to blend together nicely.
