  •  1 cup of dried lentils ( brown) make sure to rinse and drain them well.
  •  1 tablespoon of olive oil
  •  1 onion finely diced
  •  2 cloves of garlic, minced
  •  2 carrots, peeled and diced into small pieces
  •  2 celery stalks finely diced as well
  •  1 teaspoon of ground cumin for a flavorful kick
  •  1/2 teaspoon of ground coriander to add a hint of freshness

Optional: Add half a teaspoon of smoked paprika if you fancy a smoky taste sensation.

Include one bay leaf to infuse the soup with its subtle aroma.

3. Now it’s time to introduce the carrots and celery into the mix. Cook them for another three to four minutes until they start softening up

4. Sprinkle in the ground cumin, ground coriander smoked paprika (if desired). Don’t forget about adding that bay leaf! Allow these spices to cook for a minute so their fragrances can be released.

Put Together the Ingredients; Combine the lentils, tomatoes and vegetable broth. Season, with salt and pepper according to your taste.
