  •  1 tablespoon of olive oil
  •  1 onion finely diced
  •  2 cloves of garlic, minced
  •  2 carrots, peeled and diced into small pieces
  •  2 celery stalks finely diced as well
  •  1 teaspoon of ground cumin for a flavorful kick
  •  1/2 teaspoon of ground coriander to add a hint of freshness

Optional: Add half a teaspoon of smoked paprika if you fancy a smoky taste sensation.

Include one bay leaf to infuse the soup with its subtle aroma.

Make sure to add one can (14.5 ounces) of diced tomatoes along, with their juice for added tanginess.

To bring everything together use six cups of vegetable broth or water.

Season the soup with salt and pepper according to your taste preferences.

For added nutrition and color add chopped spinach or kale ( two cups).

Optional: Squeeze in some lemon juice for a zesty note before serving.

Garnish with chopped parsley or cilantro.

Lentil Soup Instructions

1. Begin by heating the olive oil in a pot, over heat.

2. Add the onion and minced garlic to the pot. Sauté until the onion turns translucent which usually takes about three to four minutes.

3. Now it’s time to introduce the carrots and celery into the mix. Cook them for another three to four minutes until they start softening up

4. Sprinkle in the ground cumin, ground coriander smoked paprika (if desired). Don’t forget about adding that bay leaf! Allow these spices to cook for a minute so their fragrances can be released.

Put Together the Ingredients; Combine the lentils, tomatoes and vegetable broth. Season, with salt and pepper according to your taste.

Let the Soup Simmer; Bring the mixture to a boil then lower the heat and let it simmer, covered, for 25 30 minutes. Keep simmering until the lentils become tender.

Introduce Some Greens; Once the lentils are cooked, add in some chopped spinach or kale. Let it simmer for another 5 minutes until the greens have wilted.

Add Finishing Touches; Remove the bay leaf from the soup. If you enjoy a flavor stir in some lemon juice. Adjust seasoning as needed.

Serve it Up; Ladle the soup into bowls and garnish with parsley or cilantro.
